Hi Helen, we wouldn’t recommend leaving it out for more than 1-2 hours for food safety reasons.

The whole point of an “enriched” dough is the butter and eggs. There are just some things that won’t translate to vegan, and this is one of them. You could try it, but I think you’ll be very disappointed.

If your ricotta is too thin, you can thicken it with some arrowroot mixed with water to make a slurry, then mix that into the ricotta. The heat of the oven should help set the ricotta. You could also warm the ricotta in a double boiler and add the arrowroot slurry then continue heating until thickened.
