So delicious!! We had leftover pumpkin I needed to use which left for the perfect amount for both the cookies and a half batch of the pumpkin butter spice frosting. I had to substitute the almond flour and decided to use spelt flour to mix it up. I used a scant 2/3 cups of spelt and a scant amount of the required oats. I was nervous it would dry things out but it ended up working very well! I am not sure they were as moist as they would have been using almond flour but we were very happy with the results as with all of the Minimalist Baker recipes! Great recipe to make with my 8-year-old too. And we halved the pumpkin frosting which frosted about 18 of the cookies quite well! We sampled two out of the oven. Light, fluffy, and full of delicious pumpkin-y spiced flavor! Thank you for the recipes as always! Enjoyed the garlicky tofu again for lunch prior to making cookies. ☺️

Delicious! Came close to winning a cookie competition with these!
I made chai icing rather than pumpkin, though. Used coconut oil instead of margarine and it was coconuty but yummy.
