We’re so sorry you didn’t enjoy it, Jane. This recipe is based off of an Italian recipe called Zuppa di Lenticchie which often doesn’t contain tomatoes. You could certainly add tomatoes and herbs such as rosemary, parsley, or thyme, but this soup is intentionally pretty neutral in flavor. We aren’t sure what would cause it to taste like dirt though – that’s a total bummer!

My son who doesn’t like soup took one bite and said, “This is great!” I’m compiling easy recipes for my adult “kids” to make, and this one will definitely go in the notebook;
I made it in the Instant Pot per your instructions at the end, and it turned out perfect. I added small-chopped mushrooms and small-diced butternut squash to the veggie sauté. I cooked whole wheat rotini pasta separately on the stove and added it to the soup at the end. I’m SO GLAD I made a DOUBLE BATCH because we are having it again tonight!
