Hi Sara, possibly, but we don’t think gluten-free flour is going to produce the same smooth texture and may be a bit grainy.

Great question! We haven’t tried that and aren’t sure if it will work. We think it might, but the texture could be too light and deflate when mixed with the pudding. Other readers have reported success using store-bought coconut whip that comes in a tub, which is going to be thicker and might mix better with the pudding. If you go that route, we would suggest using ~1 1/2 cups coconut whipped cream. Hope that helps!
